Northern Thailand is famous for many things but its greatest export surely has to be Khao Soi. It is a coconut and curry-flavored soup filled with yellow egg noodles and chicken, sitting on top of the soup are crispy fried egg noodles giving a real mix of textures to the dish. On the side of the soup bowl, you will be given a small plate that has chopped red onions, pickled green mustard, and a wedge of lime. If there is no other local food you try whilst you are in Chiang Mai you cannot leave before trying Khao Soi, it is absolutely delicious.
